As many of our friends know, traveling when you’re a vegetarian can be quite a challenge. It gets so stressing and frustrating at times that you actually view good vegetarian restaurant as touristic attractions; and as far as awesome vegetarian restaurants go, it doesn’t get any better than this!
Two siblings, Aubry and Kale Walch have spent the last several years perfecting The Herbivorous Butcher’s deliciously deceiving meat-free meats. Aubry has been a vegetarian for 18 years and Kale has recently turned vegetarian; they both have cooking experience, and they both have a dream: to open a vegan butcher shop. Their dream will become reality, as they raised over $60,000 on Kickstarter, surpassing their initial goal by over ten thousand dollars.
So what makes this shop special – why is it a must see if you’re in Minneapolis? Well, as the duo explains, they make delicious meat recipes… without the meat.
“We’ve created complex and flavorful products that will satisfy any herbivore, omnivore, and even self‐proclaimed carnivores. We’ve created a series of successful weekly specials like Maple-Glazed Bacon, Hawaiian Ribs, Andouille Sausage, Scarborough Chicken, Beer Brats, Mexican Chorizo, Pulled Pork, and Maple Sage Breakfast Sausages.”
Though the idea of a vegan butcher shop might seem counterintuitive, it’s not unprecedented. Australia has a vegetarian butcher shop called Suzy Spoon’s. And Toronto got a vegetarian butcher, YamChops, earlier this year. But in speaking with MyFox9, Aubry Walch claimed their vegan vision is one of a kind.
“No, there’s nothing in the U.S. like this,” she stated. “There’s a business in the Netherlands, but they’re more like a frozen product… We’re gonna be like a traditional butcher shop where everything is fully cooked.”
